Summertime Favorite

As we move into summer, we also enter strawberry season.  My children beg me to buy strawberries (no matter the season) to make this dish. We have actually had it every week since school let out!  I was given the recipe when I got married.  I put off making it because I thought it sounded complicated, but once I made it I realized how amazingly simple it was.  As a newlywed, I made this for quiet Saturdays as a brunch or for Valentine's Day breakfast.  Now I'm more likely to triple the recipe and serve it for a fast dinner and hope there are leftovers for breakfast.

 Puffy Strawberry Pancakes
2 T. butter
4 eggs
1 cup milk
1 cup flour
2 T. sugar
1/2 tsp vanilla
1 pint strawberries, hulled and quartered
1 T. powdered sugar (optional)

Heat oven to 425.  Melt 1 T. of butter in each of 2 9in deep dish pie plates in the oven.
Beat eggs, milk, flour, granular sugar and vanilla together.
Remove plates from oven and pour half the batter in each plate.Scatter berries on top.
Bake for 20min or until brown.
Remove and sprinkle w/ powdered sugar.

When I triple the recipe, I bake it in 2 9x13 pans.  I have used other berries, fresh or frozen, with excellent results.
