School Meal Prep

     As the end of summer approaches, my mind begins to plan for the upcoming school year.  I ponder how I can organize and prepare our home and time to ensure a smooth transition back to school.  One thing that I have found that makes our mornings easier and me less frazzled is to stock my freezer with breakfasts and lunches.  My family has to eat breakfast on the go and knowing what I'm packing in lunch boxes ahead of time makes me less weary. 
    In this post, I will share some of the things I have prepped for this year.  I chose to do a little bit at a time so that the project was not too overwhelming.  There are so many things that can be done ahead of time, but these are the things I have chosen this year.

Mini Pizzas



There are a variety of ways this could be done.  My children saw mini Naan breads at Costco so we used them as a little splurge.  I used one can of tomato paste and added the seasonings I wanted (Italian seasoning, Herbs de Provence, etc).  Spoon a little sauce on each bread and top with cheese.  Bake until cheese melts.  After the pizzas cool, place the whole pan in the freezer for 10-20 minutes so they will be individually frozen.  Package as desired.  I used a plastic container with sheets of wax paper between layers.


You could use English muffins, small buns, crescent dough or anything similar for the crust.

Tortilla Roll-Ups


Use a tortilla or wrap of your choice.  Spread with cream cheese.  This time I used chive & onion cream cheese spread.  Layer meat and cheese of your choice.  Roll.  Wrap each one in plastic wrap.  Place wrapped roll-ups in a ziploc and freeze.  I will take out the number I need and thaw in the refrigerator over night.  Variation:  Slice each roll so you have the fancy pinwheels and use as a snack instead of an entree.

Grilled Cheese


We made bread last week.  The next day I sliced three loaves and made grilled cheese sandwiches.  Shredded cheese was cheaper so that is what I used.  After the sandwiches cooled, I wrapped each one in plastic wrap.  I put the wrapped sandwiches in a bread bag to freeze.  I will take out the number I need and thaw in the refrigerator over night.

Double Good Cheese Breakfast Muffins


My children love these, and they are simple too make.  My daughter made a double batch (only some are pictured).  The recipe can be found here.  Put them on a cookie sheet and place in freezer for 10-20 minutes so they will be individually frozen.  Place in a ziploc to store in the freezer.  Take out how many you need in the morning and warm in the microwave.

Breakfast Sandwiches


Today we chose to make bacon, egg, and cheese sandwiches.  I made half with refrigerator biscuits because I was trying to save a little time.  For the other half I used English muffins. It helps to have all the ingredients prepared and then just do a mass assembly.




I individually wrap each sandwich in plastic wrap and then place the sandwiches in a ziploc to freeze.

Individual Egg Portions


Egg casseroles or quiche are wonderful breakfast (or anytime) foods, but often aren't ideal for early, busy mornings.  I do not want to get up early enough that the breakfast has an hour to bake.  A great solution for that is to take your favorite breakfast casserole and bake it in greased muffin tins.  These will make a hearty breakfast that are quick to warm.  Variation:  Take your egg portion and put it in a tortilla for a fast breakfast taco!


Freeze the egg "muffins" on a cookie sheet for 10-20 minutes so that they are individually frozen.  I chose to package them in a plastic container.

Pancakes



My family chose to start the year with pancakes instead of waffles.  I wanted to increase the protein, however, so that they were not starting the day with a carb heavy meal.  I added cottage cheese and protein powder to the pancake mix.  The mix I used also called for eggs, milk, and oil.


After the pancakes cooled, I wrapped a serving of pancakes (in this case, 2 pancakes) in plastic wrap.  I placed the wrapped pancakes in a plastic bag to freeze. 

My freezer is getting full, and I am feeling ready to send my family off to school.  I love that I will have the ease of convenience food but know they are eating food that is good for them.  I have also been stocking up on fruit, granola bars, and other lunch items as I find them on sale.  Hopefully, this will spark some ideas for you as well.   Now, I need to make sure to get school supplies!

Summertime Favorite

As we move into summer, we also enter strawberry season.  My children beg me to buy strawberries (no matter the season) to make this dish. We have actually had it every week since school let out!  I was given the recipe when I got married.  I put off making it because I thought it sounded complicated, but once I made it I realized how amazingly simple it was.  As a newlywed, I made this for quiet Saturdays as a brunch or for Valentine's Day breakfast.  Now I'm more likely to triple the recipe and serve it for a fast dinner and hope there are leftovers for breakfast.

 Puffy Strawberry Pancakes
2 T. butter
4 eggs
1 cup milk
1 cup flour
2 T. sugar
1/2 tsp vanilla
1 pint strawberries, hulled and quartered
1 T. powdered sugar (optional)

Heat oven to 425.  Melt 1 T. of butter in each of 2 9in deep dish pie plates in the oven.
Beat eggs, milk, flour, granular sugar and vanilla together.
Remove plates from oven and pour half the batter in each plate.Scatter berries on top.
Bake for 20min or until brown.
Remove and sprinkle w/ powdered sugar.

When I triple the recipe, I bake it in 2 9x13 pans.  I have used other berries, fresh or frozen, with excellent results.

Starting Anew

I've neglected my blog for many reasons. Life has been busy. I didn't really know what I wanted my blog to be about and how much I wanted to share on it. I'm still not really sure, but I decided that I need a place to organize my menus. I don't want to start something new so I will do it here. I don't really want a recipe/meal planning blog, but I also am tired of feeling like I'm reinventing the wheel all the time and I keep having similar conversations with friends who want the same recipes. It is at least something I can write about each week. Perhaps it will spur me on to write out some of the other thoughts that are tumbling around in my head.

Mom's Tortilla Soup
I could have saved some of the fajita meat if I had already made the meal plan, but I wasn't that farsighted. I just used a rotisserie chicken. The girls like chicken legs so I will send those for their lunch on Weds. Dennis decided he wants chicken for lunch as well.

Pregnancy Musings

Two events this week prompted a series of somewhat connected rambling thoughts.

1. I met a sweet 4 year old who had never even heard the name of Jesus or God.

2. I read a doctor's account of what occurs during a 2nd trimester abortion.


As my mind was processing these things, I realized that even my sweet 23 week gestation baby girl has heard the name of Jesus. My 3 yr old especially loves to sing to her new sister. She sings "Jesus Loves Me" and "Jesus Loves the Little Children" I love to see my children snuggle and kiss my belly as they talk to the baby. My heart especially melted to hear the little one croon, "oh baby, you are so precious to me!" My brain and my heart cannot even comprehend the deep sorrow that must surely come for those who have been blinded by Satan's lies regarding the preciousness of life.

Thinking of my children snuggling my belly reminded me that some pregnant women really don't like people touching their bellies. Generally, it does not bother me although there was that awkward moment during the first weeks of my first pregnancy when a student's dad touched my flat belly. In fact, the first time my oldest heard of Jesus was when Mrs. Drury felt my belly and whispered "Jesus loves you and so do I". Seriously, how can I not love it when she speaks words of love to my unborn child and tells me how beautiful I am as my belly gets bigger and bigger?

I am reminded of the psalmist words, "The lines have fallen to me in pleasant places; indeed my heritage is beautiful to me." Ps 16:6

Early Morning Thoughts

As I was reading the news headlines this morning, I couldn't help but think of the following passages.
Why are the nations in an uproar, and the people devising a vain thing? The kings of the earth take their stand, and the rulers counsel together Against the Lord and against His Anointed: (Ps 2:1-2)
He who sits in the heavens laughs, The Lord scoffs at them. Then He will speak to them in His anger And terrify them in His fury. (Ps 2:4-5)
Now therefore, O kings, show discernment; Take warning, O judges of the earth. Worship the Lord with reverence, and rejoice with trembling. Do homage to the Son, lest He become angry, and you perish in the way, For His wrath may soon be kindled. How blessed are all you take refuge in Him! (Ps 2:10-12)
The king is not saved by a might army; A warrior is not delivered by great strength. A horse is a false hope for victory; Nor does it deliver anyone by its great strength. (Ps 33: 16-17)
Thus says the Lord, " Let not a wise man boast of his wisdom, and let not the mighty man boast of his might, let not a rich man boast of his riches; but let him who boasts boast of this, that he understands and knows Me, that I am the Lord who exercises lovingkindness, justice, and righteousness on earth; for I delight in these things," declares the Lord (Jer 9:23-24)
As I think about these verses, I am thankful that I do not need to rely on governments to make what I think are right decisions to ensure my financial security, peace from conflict/wars, or a future for my children. I can trust the Creator of the universe who extends mercy, love, justice and righteousness (even if I can't see how a situation is right or just in my eyes) !

Christmas Funnies

Oh my! One girl is home with me baking today while Daddy takes the other one Christmas shopping. We are having a lovely time, but I'm constantly cracking up with all her little conversations.

"Mom, how long do we have to live in this house? Can't we just move to a trailer"

"I am so tired; I was about to fall asleep. I really needed some caffeine."

"Presleigh can't have coffee. I guess I'm just a fortunate girl!"
